Remember When Apple Pie

With the air having turned deliciously crisp outside I knew I needed to embark on my first ever pie baking experience. Yes. I'm 26 years old and I've never baked a pie. Until now. I think being afraid of failure has always held me back, but enough of that! It seemed like a 'rite of passage' into motherhood; that every mom should know how to make at least one AWESOME pie. With the holidays coming up I've been thinking a lot about things I want to be remembered for as my kids grow up. Smells that take them back to their favorite times. Or things that make them say, "Remember when...." Every family should have a staple memory like that and I'm going to make this apple pie our family staple!
I found this recipe on Pinterest originally by Paula Deen, though I made a couple of slight changes. This is so super easy to make and after realizing how easy it is -- I will be making these a whole lot more!
Remember When Apple Pie:

Ingredients:
  • 3/4 cup of light brown sugar
  • 1/4 cup of all purpose flour
  • 1 tsp of cinnamon 
  • pinch of nutmeg
  • 7 medium green apples, peeled & sliced
  • 1 tbsp lemon juice
  • 3 tbsp butter, cubed
  • 2 unbaked pie crusts
  • 1 egg, used for brushing onto pie crust


Instructions:
  • Preheat oven to 375ºF.
  • Mix together the dry ingredients of brown sugar, flour, cinnamon, and nutmeg.
  • Peel & slice the apples.
  • Place the apple slices in a large mixing bowl. Toss with the dry ingredients mixture to coat.
  • Press a pie crust into the bottom of a 9-inch pie dish.
  • Fill with the apple mixture.
  • Drizzle the lemon juice over the apples. Sprinkle the cubed butter over top as well.
  • Place the second pie crust over the filling (you can make a lattice top or simply cut slits to vent the steam). Press edges to seal.
  • Brush all of the visible pie crust with egg mixture.
  • Bake for 55-60 minutes. Let cool before slicing.

**For an extra touch, sprinkle some cinnamon on top of the pie crust (per my Father's suggestion! HAHA)

That's literally it! This thing was so piping hot, that you could whip this up just a couple of hours before you have to go somewhere and it would probably STILL be warm when you get there! I tested out my first one on my life group and they're all still alive, so.... I guess it was okay? JK. They loved it and said that I needed to bake at least 10 more for them to be totallyyyyyyy certain how they feel about it. ;)

** I would like to note that my dad said a bonus to the lattices crust is that you can also play checkers on top of the pie. So. Just another way to continue that family fun... HAH! Shout out to my mom for letting me call her about a thousand times while grocery shopping for this AND while baking it!
