Sweet Tooth

About once a month I get a REALLY bad sweet tooth... you know the kind. Your stomach is a bottomless pit. "Everything must go" kind of hunger. It's important for Eric and I to keep healthy snacks around the house. Especially ones that are great for pre & post workout! I found this recipe originally on Pinterest -- surprise! I tweaked it just a little to make it a tad healthier and guilt free! Everything you need for your quick fix is listed below!

Chocolate Peanut Butter Protein No Bake Cookies:

Ingredients:
  • 2 cups old fashioned oatmeal
  • 1 scoop (21 grams) chocolate protein powder (I used Whey Chocolate)
  • 1/2 cup creamy natural peanut butter
  • 1/2 cup unsweetened vanilla almond milk (Mine was a 30 cal per serving)
  • 1/4 cup lite syrup
  • 2 Tablespoons cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon sea salt


Instructions:
  1. Combine oatmeal and protein powder in a medium sized mixing bowl. Stir evenly.
  2. Place almond milk, peanut butter, lite syrup, cocoa powder and sea salt in a saucepan and cook over medium-low heat. Stir until cocoa powder is completely dissolved and the sauce has thickened. (Generally takes less than 8 mins) Take the pan off the heat and stir in the vanilla extract.
  3. Pour peanut butter chocolate mixture over oats/protein powder and mix until all pieces of the oatmeal are covered.
  4. Place batter in the fridge for 10 minutes to let the batter set up – this helps you shape your mounds easier!
  5. Drop chilled dough by the spoonful onto a baking sheet lined with wax paper. I've found they are enjoyed best if they're able to chill for a few hours at least or even sit overnight!

The entire batch consists of 1,500 calories. So, based on how big or small you decide to make your portions, this could make the calorie count differ. Simply divide the 1,500 by how many cookies you make and you'll have your exact calorie count per cookie!

Normally I'm able to make about 17 cookies from this batch. My breakdown per serving ends up being:
88 calories
10g carbs
4g fat
4g protein
2.5g sugar
